"Yukimi-daifuku" Mochi Ice Cream

The weather in Bay Area has been weird for the last couple weeks. One weekend, you thought Spring finally arrived but then the temperature immediately dropped to 50s (10 Celsius) the following week (in the morning).

This weekend was the same again. It has been chilly for the last two days but this Saturday, it suddenly hit 80s (26 Celsius) during the day. My kids and I were not dressed properly for the temperature when we went to a park and we had to escape back to home in less than one hour!

Anyway, although I don't eat ice cream often, when it gets hot, I won't say no to ice cream. I am very particular about my ice cream. I like Haagen-Dazs (strawberry flavor, rum raisin flavor, vanilla flavor, almond chocolate ice cream bar) and Tillamook (only discovered this recently and only tried strawberry flavor). I also stop by gourmet ice cream shop once a while.

However, my absolute favorite ever since I was a kid is mochi ice cream - "Yukimi-daifuku". It directly translates to snow viewing sticky rice cake.

In fact, there are many locally made mochi ice cream in California. You can also find one from Trader Joe's. But none of them is better than "Yukimi-daifuku" in my opinion.

The mochi (sticky rice wrap outside ice cream) stays soft even if you keep it for a long time in the fridge. Ice cream inside is fluffy and milky (it almost feels like iced whip cream rather than ice cream). You can find other flavor of "Yukimi-daifuku" in an assorted pack (green tea & chocolate). Green tea flavor is yummy too.

If you claim you are also a mochi ice cream fan, you should try this traditional mochi ice cream out at least once!

New hobby just because it's spring!

Homemade Croissant

My kids love croissant. French croissant is very buttery and flaky. I love them too. However, the good ones will cost me several bucks per croissant if I buy it from a French bakery in the U.S. Last year, I decided to make them myself. I tried many recipes. This one is not as complicated and it tastes good. Warning - it is tasty but it doesn't taste like the ones from the bakery. Kitchenware you will need : Baking pan Parchment sheet Plastic wrap Rolling pin Ingredients you will need : Bread flour 300 g Sugar 30 g Salt 4 g Dry active yeast 7 g Egg (beaten) 1 Milk (warm) 150 ml Butter (chop into small cubic pieces) 30 g Butter for filling 1 stick or 115 g Step 1: Add ingredients #1 to #7 into a bowl. Put #8 (a stick of butter) between two plastic wrap.  Tip : Put sugar and yeast side by side and add milk (pour it on sugar side). Then, add bread flour, salt, egg and butter.
